Bar Z Roasted Corn Salsa

1 (16 oz) bag frozen corn
2 large tomatoes, diced
1 small red onion, chopped
1 (15 oz) can black beans, drained and rinsed
3 green onions
1 clove garlic, minced
1 avocado, diced
juice of 3 limes
1/2 cup chopped cilantro
1/4 cup olive oil
salt and pepper to taste

Spread corn in a single layer on a cookie sheet. Allow corn to thaw, then place sheet under broiler and broil kernels until they begin to brown. Cool, and place in mixing bowl with remaining ingredients. Allow mixture to sit several hours or overnight for flavors to marry. Serve with tortilla chips.

Easy Key Lime Pie

1/2 cup lime juice
14 oz. sweetened condensed milk
8 oz. cool whip

Mix together and put in 9" graham cracker crust. Freeze or refrigerate. Garnish with whipped cream and lime slices.

Garlic Bread

Buy or make your french bread.
Buy the Johnny's Garlic seasoning from Costco and on the back are directions to make a garlic butter.

Pear Tart

Crust:
1/2 c. butter-softened
1/3 c. sugar
3/4 c. flour
1/4 tsp vanilla
2/3 c. finely chopped macadamia nuts

Cream together butter and sugar, add remaining ingredients; mix well. Press into a greased 8x8 baking dish. Cook at 350 for 2o min or until brown.

Filling:
8 oz cream cheese-softened
1/2 c. sugar
1 egg
1/2 tsp vanilla

Beat cream cheese until smooth. Add sugar, egg and vanilla; mix well. Pour over the crust.

Top:
1 can pear halves-drained
1/2 tsp sugar
1/2 tsp cinnamon

Slice pears and arrange in a single layer over filling. Mix sugar and cinnamon together and sprinkle over pears. Cook at 375 for 28-30 min.

Center will be soft set and will firm upon cooling. Cool on a wire rack for 45 min. Cover and refrigerate for at least 2 hours before serving.


This sounds like a lot of work but it didn't seem like that much work when I was making it.

Olive Garden Fettucine Alfredo

8 oz. cream cheese- cut into bits
3/4 c. Parmesan cheese- shredded
1/2 c. butter or margarine
1/2 c. milk
8 oz. Fettuccine, cook--drain

In large saucepan combine cream cheese, Parmesan, butter and milk; stirring constantly until smooth. Toss pasta lightly with sauce, coating well.

Leftovers freeze well...so the recipe says, but reheating this in the microwave just isn't the same as the fresh alfredo. Just to give you an idea of how much sauce this makes...I tripled this recipe for us 12 girls and went heavy on the sauce.

Salad

Here's the salad we had too! Thanks for asking Karin!

1-2 bags Romaine lettuce (or chop Romaine hearts up...it's cheaper that way!)
Craisins
Bacon Bits
Candied Pecans (I didn't do these this time)
Shredded Parmesan Cheese
Croutons
Good Seasonings Italian Dressing (requires vinegar and oil to make)

Toss everything together right before serving. I make the dressing (according to pkg directions) beforehand and put the salad together and mix right at the end.

BBQ Ribs

Here's the recipe for the ribs. Brooke actually gave it to me so the credit goes to her :)

1-2 packages country style ribs (you can use a rack of ribs, but you have to cut it up. Brooke told me it's just easier to buy country style)
KC Masterpiece Original BBQ Sauce (I buy the big one so I have plenty!)

Place ribs in large pot and just put enough water in to cover the ribs. Season with garlic, salt and pepper. Boil for 45 minutes to 1 hour.

I spread a little BBQ sauce on the bottom of a 9X13 pan first. Place ribs in pan and generously pour BBQ sauce over each one. Sprinkle ribs with garlic. Cover and bake at 325 for 1 hour.

After the hour of cooking, take out and pour a little more BBQ sauce on them. Put back in oven for about 10 minutes. For the last 5-10 minutes of cooking, take tin foil off.

So easy and yummy!
